National Pie Day 2014

I bring you Chocolate-Pecan greetings from Manila Guam (we extended our stay...) where America's National Pie Day 2014 begins!

Actually, this recipe was originally shared here on Kelley Highway one year ago, however you know that later in spring 2013, I deleted my blog.  So, it's your blessing to feast your eyes again upon these images, and then go bake for yourself

Chocolate-Pecan Tartlets (or Pie).


Lovin' in the oven



Chocolate-Pecan Tartlets (or Pie)
Yields 10 tartlets (3.5-inch pans)
{For me, it yielded 2 5-inch tartlets, 2 6-inch tartlets, and 2 3.5-inch tartlets.}

Prepare a day ahead.  After cooling, tartlets will be chilled overnight.

1. Preheat oven to 350F degrees.

2. Crust
Prepare pans first by lining them with piecrust. Place pans in refrigerator.

3. Filling
In a large bowl, mix:
1 cup sugar
1 Tablespoon flour

Whisk in until combined well:
4 large eggs
1 cup light-colored corn syrup
1 Tablespoon unsalted butter, melted

Mix in:
2/3 cup chopped Alabama Surprise pecans (Thanks Jerry and Carol!)
(NOTE:  Set aside 1½ cups Alabama Surprise pecan halves to garnish the tartlet tops.)
2/3 cup chocolate chips

Divide mixture evenly among prepared crust-lined tartlet pans.

Place filled tartlets onto foil-covered baking sheet for easy clean-up.  Now, arrange the pecan halves on top of each tartlet.  Bake at 350F degrees until golden on edges and set in the center, about 25 minutes. Cool on a wire rack, then chill overnight so tartlets are fully set.

Your pie sounds wonderful! The only good Pecan Pie we can get here is at the Famous Daves restaurant. But, my hubby loves it, I will make this for him one day!
